Handmade Ramen with Thick Tonkotsu Soup

Fuji Ramen is located near the Tsukuba Express Asakusa Station, close to the ROX building on Kokusai-Dori.  

The restaurant’s name is written in kanji right above the entrance. There is also a black and white nobori flag normally at the left corner with “tsukemen” written in kanji. Once you enter the restaurant you will first need to buy a ticket from the vending machine.  

Fuji ramen specializes in tsukemen, or dipping noodle style, with rich tonkotsu (pork bone) base soup. If you are a fan of tonkotsu ramen, Fuji Tokusei Ramen with added chashu and soy-marinated egg is highly recommended. Typical toppings include spring onions, menma, bean sprouts, boiled egg and nori seaweed.

When you order tsukemen, you can choose a normal, medium, or big portion of noodles. After you finish all the noodles, you can ask the staff to add extra broth to the dipping soup called “soup wari" which dilutes the original soup for drinking.

Noodles are handmade and they are straight, medium thick, and very good both as tsukemen or ramen.
