The Pioneering Tonkatsu Establishment in Ginza

When Ginza Bairin opened its doors in 1927, it was the first Tonkatsu specialty restaurant in Ginza. He came up with the idea of the "One-bite Katsu" and created his own special Medium-thick Chuno Sauce (Tonkatsu Sauce), which quickly became a signature dish. Today, Ginza Bairin is widely known as a renowned Tonkatsu restaurant, with appearances on television and in magazines. The restaurant has expanded its menu over the years to include creative dishes such as the "Hire Katsu Sandwich" and the visually striking "Special Katsudon." But despite its growth, Ginza Bairin has remained committed to using only the highest quality ingredients. The restaurant sources its Kurobuta pork from Kagoshima, known for its tender and juicy taste, and uses specially made oil mainly consisting of healthy cottonseed oil. The rice used in its Tonkatsu, "Tsuyahime" rice from Yamagata, is carefully chosen for its flavor and texture.
