Hiroyuki Kanda, an owner chef, is from Tokushima Prefecture. He began his training as a chef in Osaka before moving to Paris where he worked as a head chef of a Japanese restaurant for five years. In addition to being one of the leading figures in Japanese cuisine, Chef Kanda is a master chef who is universally recognized as one of the leading figures in contemporary Japanese cuisine.

Excellent cuisine and service is a given. Nihonryori Kanda is about much more.

The restaurant is cozy and inviting. The white wooden counter seats nine people arranged around the master chef and enclosed within a wall of shelves featuring carefully selected ceramics by an acclaimed potter. As intended, the intimacy of this arrangement allows the chef to carefully gauge the attitude and feelings of each guest. The dishes Chef Kanda serves are selected, exquisitely prepared, and artistically presented with each person in mind. Likewise, conversation is adjusted to fit individual moods including those of foreign guests. Chef Kanda is fluent in English.

For those who desire privacy, the restaurant has a private room which has a capacity of six people.
