Japanese-Style Wonton Noodles

Shinasoba Yamato is located on Asakusa-dori. Commonly known as Butsudan-dori, it is an avenue between Ueno Station and Tawaramachi Station. The street is lined with many shops selling household Buddhist altars (butsudan) and household Shinto altars (kamidana).

Take Exit 3 at Inaricho Station on the Tokyo Metro Ginza Line and walk along Asakusa-dori for about 2-minutes in the direction of Tawaramachi. Inaricho is one stop away from Ueno Station. The restaurant is diagonally across the street from Ramen Inariya. The white signboard with the shop name written in black letters is the landmark. The owner-chef was trained at a Michelin-starred Shinasoba Yakumo before opening his restaurant. Unlike Inariya Restaurant which serves only meat wonton noodles, Shinasoba Yamamoto serves both shrimp and meat wontons.

Shina-Soba is the popular dish favored by many regular customers. Note that ramen is sometimes called Shina-Soba or Chuka-soba, terms traceable to the period of dish’s introduction into various regions of Japan. Shina is an archaic Japanese term for China and Chuka is an adjective for Japanese-style Chinese dishes. But don’t be confused by the names; they both refer to the same basic ramen dish: an old-fashioned soy sauce flavor, thin noodles, and a topping with simple ingredients.

The basic menu is wonton noodles made with three kinds of soy sauce soup base: white, black, and black and white mix. Of the three, the mixed black and white Tokusei (special) Wonton Noodles is highly recommended. The soup is made from whole chicken, pork, kelp, dried bonito flakes, mackerel flakes, and other ingredients mixed with the soy-sauce soup base. Thin noodles are topped with plump shrimp and meat wontons.
