17-Years at an Iconic Ginza Kyubey

Sushi Hisaichi is located in the back alley of Asakusa Sensoji Temple.

The restaurant was founded by owner-chef Ichiro Deguchi who worked at Ginza's prestigious Kyubey for 17 years before going out on his own at the age of 36. The master was born and raised in Asakusa, a genuine "Edo-ko" (i.e. a person born and raised in Tokyo).

The restaurant name, Hisaichi, was derived by combining the first character of Kyubey in Ginza, which can also be read as Hisa, with the word Ichi from his name: Ichiro.

Shari (sushi rice) at Hisaichi is lightly seasoned using only vinegar and salt without any sugar. This results in an authentic and classic Edomae flavor.
