A Superb, Unpretentious Michelin-Starred Restaurant

Sushi Isshin is located in the back alley of Asakusa Sensoji Temple.

The restaurant is a 1-star Michelin Edomae style restaurant quietly standing in a corner of Ura-Asakusa or backside of Asakusa. The restaurant is in the shitamachi, or downtown, area. It has only 10 L-shaped counter seats and a 4-seat dining table.

The rice at Sushi Isshin is moderately hard cooked over a charcoal flame and seasoned with akazu (red vinegar) and salt. Akazu is a key characteristic of Edomae style. It is a traditional style of sushi with toppings such as zuke-maguro (soy marinated tuna) and kanpyo-maki (dried gourd strips).

Locals typically order the omakase (chef’s selection) course with choices of either 10,15 or 20 pieces along with tsumami (small appetizers for nibbling with a drink).
