The restaurant specializes in Mapo-men – literally mapo tofu noodle bowl – a classic Chinese dish from Sichuan province. Mapo-men is a medium-thick noodle dish topped with a generous amount of cubed silken tofu and flavored with fermented bean paste, ground pork, chili oil, and Sichuan peppercorns. The Ginza main branch is accessible from either the Ginza-itchome subway station or from JR Yurakucho Station. It is a chic noodle joint, inviting for both solo men and women alike.
At the restaurant’s helm is a former Chinese restaurant chef. The restaurant offers four types of noodles: Mapo-men, Sanratan-men (hot and sour soup noodles), Tantan-men (dan-dan noodle soup), and Shirunashi Tantan-men (soup-less dan-dan noodles) – all of which are Chinese favorites with a Japanese twist. Except for the Sanratan-men, you will be asked to choose from three levels of spiciness: light, medium, and heavy.
The restaurant recommends you add a bit of blended vinegar, chili pepper, and sansho oil to the dish. These ingredients are provided at each table so that you can customize the taste to your liking.
Incidentally, Iron Chef Chen Kenichi popularized dan-dan noodle soup in Japan. This is a modification of the soup-less, dan-dan noodles which are the mainstream taste in Sichuan province.
