Sushi Sugaya is located near Akabanebashi station which is close to Tokyo Tower.
Behind the white noren curtains, a narrow stepping stone pathway leads you to a hinoki cypress door. Calligraphy posted at the entrance is a work by the owner-chef himself. There are only eight L-shaped counter seats that allow fine hospitality for each guest. Chairs are made by an artisan furniture maker in Hida City in Gifu Prefecture; they are designed to relax guests and encourage them to enjoy the service.
Sushi Sugaya is run by a young couple: the husband is the owner-chef and the wife is the proprietress. Takayuki Sugaya, the owner-chef, was trained at a number of famed establishments such as Sushi-Dokoro Kazama, Sushi Shin, and Sushi Arai before he opened his restaurant in December 2018 after 22 years of experience.
The restaurant emphasizes nigiri sushi and focuses on simple side dishes. Nigiri are made with a pinch of salt for a crisp flavor. Sushi rice is made with a blend of several varieties of red vinegar to achieve a strong flavor with no sweetness.
The omakase course consists of 4 to 5 side dishes and around 15 pieces of sushi. Tuna is sourced from a top merchant, Yamayuki, in Toyosu, and all other seafood obtained from the Toyosu fish market.
