Michelin 2-Star--Evolution of Kappo: from Shiga to Ginza

The restaurant is tucked away in a back street in Ginza 1-Chome. 

Owner chef, Takemasa Shinohara, is from Shiga Prefecture. His natural talent blossomed in his early years while working at famous kappo restaurants in the Kansai area and at a kaiseki restaurant in Kyoto. At the tender age of 27, he opened Shinohara in Shiga Prefecture and, within a decade, it became one of the most popular restaurants in Japan. In 2016 Chef Shinohara accepted the ultimate challenge by opening the Ginza branch in Tokyo.

From behind a white, wooden counter, Chef Shinohara and his apprentice are able to keep close tabs on each customer. The short distance between the chef and each customer might make a person nervous, but the warmth of the owner's personality and hospitality puts guests at ease. Regulars and first-timers alike are greeted with a warm welcome in an atmosphere that is friendly and relaxing. 

Typical of kaiseki cuisine, the restaurant uses an abundance of seasonal ingredients which, under skillful preparation, allows guests to “feel” the seasons from the taste and appearance of the food. Chef Shinohara uses fresh mountain and sea products gathered from all over Japan to create amazing dishes. 

Although it is an upscale restaurant, Ginza Shinohara is not a place for quiet reflection. It is decidedly for those who want to enjoy both lively conversation and delicious food.
