A5-Ranked Wagyu Beef at an Affordable Price

Ibuki is located in an alley very close to Yamada Denki LABI Shinjuku, a consumer electronics retail chain. As finding this restaurant can be difficult, look for a sign saying “Three Bar.”  Make your way inside and go up to the second floor of the building.

Established in 1950, this restaurant remains very popular among both locals and tourists. Upon entering, one encounters an atmosphere reminiscent of the long-ago Showa era. The restaurant is dim and very cozy, and it can sit up to 20 customers. Ibuki is a small, family-owned, tradition-preserving business.

The menu at Ibuki is simple: choose either sukiyaki or shabu shabu. For first timers, we recommend you have sukiyaki; it is Kanto style made by mixing warishita (a type of sweet sauce) with sugar, shoyu, mirin and sake. The resulting mixture is simmered together with ingredients consisting of A5-ranked, thinly sliced, Kuroge Wagyu, grilled tofu, negi, shungiku (crown daisy), shiitake mushrooms, enoki mushrooms, and shirataki noodles. The Okami (proprietress) will cook on an iron pan at your table; just sit back and enjoy the scenery and experience until all is ready. Dip the cooked beef and vegetables into a bowl with a raw egg and enjoy the sweet but mild taste.
