Located in Nishi-Shinjuku, Menya Sho Honten specializes in shio (salt) ramen. Among the dozen ramen shops in Shinjuku, Menya Sho Honten is most often covered in restaurant magazines. The Nishi-Shinjuku area is primarily a residential area dotted with various restaurants, from washoku (traditional Japanese dishes) to izakayas (Japanese style pubs) and ramen shops.
The most popular menu item is the Shamo Tokusei Shio Ramen. The golden-colored hybrid soup fuses three different types of chicken – Tokyo Shamo, Hakata Jidori, and Kyozakura Oyadori – with the savory umami taste of pork. The soup base is made by blending four kinds of salt, four types of dried bonito flakes, dried baby sardines, and shiitake mushrooms. Umeshu (plum wine) and sake are added to the base to enhance the flavor. The thin, whole wheat straight noodles are custom-made by the Kanno Seimen noodle factory. The focus is on the aroma, texture, and firmness of the wheat. Toppings are comprised of chashu pork, chashu chicken, ajitama (seasoned egg), wontons, bamboo shoots and kujo negi.
