In 2014, the current owner-chef inherited the restaurant from her father and has been preserving the tradition that he pursued for 55 years.
The signature dish is Conger Eel Nigiri that is more meaty and larger than most other restaurants. The restaurant has an established reputation for "Hikari-mono" or shiny fishes which includes kohada (gizzard shad) and saba (marinated mackerel).
Edomae style preparation of Hikari-mono requires intricate skill which is one of the defining points of a master sushi chef.
