Motenashi Kuroki is located between JR Akihabara and Tokyo Metro Asakusabashi Stations.
The restaurant is considered one of the best ramen restaurants in the area. It has been recommended by the Japanese media multiple times in the past. Orders are taken by buying a ticket at a vending machine in advance.
After graduating from a culinary school, Naohito Kuroki, an owner chef, tenaciously managed to get his foot in the door at a ryotei, a high-end traditional restaurant, in Akasaka. He then moved on to working for an Italian restaurant, and later worked his way up to the position of Executive Chef of the Gyu-kaku restaurant group, one of the largest yakiniku restaurant chains in Japan. Being in a position as supervisor, chef Kuroki’s natural instinct as a chef drove his desire to get back on to the cooking scene. Fascinated by the aesthetics of ramen and the way food is expressed in one bowl, led to the opening Motenashi Kuroki in June 2011.
Instead of the conventional miso-based ramen, Motenashi Kuroki uses only two types of soup bases: shio (salt) and shoyu (soy sauce). The signature bowl is Tokusei Shio Soba or special salt ramen. Clear amber colored soup base is made of multiple types of salt mixed with a combination of meat and seafood broth; this consists of chicken, duck, niboshi (dried sardine), and kelp. You can choose between hosomen (thin) or hirauchi (flat) noodles. All toppings including chashu pork marinated with garlic and herbs are made in-house. Chashu, dried tomatoes, negi, mustard spinach, bamboo shoots, a single wonton and a seasoned egg sit atop noodles nestled in a clear soup.
Aside from their standard menu, the restaurant also serves limited-edition seasonal ramens. Please be aware that recipes of every ramen bowl might change as chef Kuroki endeavors to persistently improve his hospitality in one bowl.
There is always a long queue during both lunch and dinner hours but the turnaround rate is fast so wait time should be relatively short.
