A Michelin Bib Gourmand Restaurant

Mugi to Olive (Wheat and Olive) is located just behind the Ginza Six Shopping complex. It is a equidistant and a short walk from either Tokyo Metro Ginza or Higashi Ginza Stations.

The restaurant name comes from the use of olive oil in the dishes. They have three variations of their soy-based soup: one with chicken, one with niboshi (dried sardines), and another with hamaguri clams. If you want a mix of all three, you can order the triple soba. The thin straight noodles are made from a blend of 20 types of selected wheat.

While Hamaguri Soba is their signature dish, Tori Soba, made of Oyama chicken broth from Tottori Prefecture, is another specialty. Toppings include tender pork and chicken chashu, nagaimo (mountain yam) batons, elegantly knotted naruto (fish cake), chopped green onions and seaweed. Halfway through your bowl, try adding a generous splash of olive oil from the bottle on the counter to create another flavor.

If you are able to handle raw egg, try the tamagokake gohan (raw egg over rice) on the side; it is simply referred to as TKG by the Japanese.

Please be aware that there are times when the restaurant runs out of soup.
