Yoshihiko Shimada, a fourth-generation chef, succeeded his father in taking over the family business at the age of 36. The history of the restaurant dates to 1905. The fourth-generation’s great grandfather, who worked for the Ministry of the Imperial Household as a western cuisine chef, started with the aim of serving western-style dishes that complement rice.
The signature breaded pork cutlet has a distinctive golden coating without much fat. The chef renders pork fat into lard for use in deep-frying, initially at a low temperature, to keep the meat juicy before gradually raising the heat. This process brings out the best flavor of the meat. Sample the dish without the condiments to appreciate the original taste; experiment with salt and, finally, with sauce. The pork used is not based on a particular region or brand, but, rather, the best available ingredients at a given time.
Aside from pork cutlet, the restaurant also offers various deep-fried seafood dishes that might suit your purpose: tiger prawn, salt-water eel, whiting, surf clam, squid, and oysters. We recommend you order rice, akadashi miso soup, and pickles as a side. If you are hesitant about the deep-fried line ups, try ordering their beef tongue stew, a generous portion of tender kuroge wagyu with a sauce made over the course of three weeks.
