Soba Sasuga is tucked away in a back street in Ginza 2-Chome, on the second floor of the Toji Building. It can be accessed from either Tokyo Metro Ginza, Higashi-Ginza, or Ginza 1-Chome Stations.
Counter seats and table seats, as well as private rooms, are available. The restaurant is spacious and has an elegant atmosphere full of warm wood tones.
The restaurant’s name suggests its mission: making soba simple, yet stylish. The basic noodle is complemented by kaiseki-quality side dishes. As a starter, try the yakimiso, grilled miso studded with roasted buckwheat, and Sobagaki Agedashi--fried buckwheat dumpling in a hot soup.
Soba Sasuga specializes in hand-rolled juwari soba. It is made of water and buckwheat flour with no fillers. The expertly crafted juwari soba is a thin noodle with a rich fragrance and smooth texture. In total, there are 11 soba entrees to choose from. The simplest type is chilled kakesoba; it is chilled soba with a dipping sauce poured over it. Zaru soba is a standard chilled soba with a cold dipping sauce. A fancier choice is kamonegi soba which is a chilled soba that comes with a hot dipping sauce that includes duck and welsh onion.
