Sushi Arai is in the basement of an office building called Ruan in Ginza. Pass through the white noren (curtain) and you will see a very simple and sparsely decorated interior.
Yuichi Arai, the owner chef, trained at the prestigious Ginza Kyubei for 10 years following his graduation from high school. Arai later worked at Sushisho for 6 years before opening Sushi Arai in late 2015.
The restaurant has a main counter and an entirely private room. Counter seating, manned by Chef Arai, seats seven guests, which are typically occupied by regulars. Non-regulars are normally directed to a private room, manned by an equally skilled chef. This seating arrangement is due to its popularity as well as Chef Arai’s intention of providing personalized hospitality for each guest. Try your luck when making a reservation.
Sushi Arai serves Edomae style sushi. The restaurant is known for its exceptionally high-quality maguro (red tuna). The chef varies the shari recipe based on the flavor of that day's tuna. Each piece of nigiri is a bit larger than the standard size. It is prepared with a well-balanced blend of red vinegar and rice vinegar.
