Michelin 1-Star Edomae Style Sushi

Without a doubt, Sushi Tokami is one of the leading sushi restaurants in Ginza. The owner of the restaurant personally visits Tsukiji Market and carefully selects the ingredients after checking the quality with his own eyes. The dishes that the restaurant prepares bring out the best of the ingredients. They have a delicate, yet deep flavor. The dining experience is enhanced by the spirit of hospitality that pervades the restaurant.

The shari (rice base) is made of only salt and red vinegar. The high-quality rice is Haenuki, a brand of rice representative of Yamagata prefecture. The high-quality red vinegar is an original blend of Yokoi Brewery's Yohei and Mizkan's Tokujo Yusen. The maguro (red tuna), with its melt-in-your-mouth akami (red colored meat tuna), is the best available. Prices are reasonable with lunchtime nigiri starting at 5,000 yen.

The sushi is made using traditional Edomae techniques. The famed hon-maguro (bluefin tuna) is procured from Yamayuki, a wholesale company which receives competitive bids from high-end sushi restaurants all over Japan.

One of the restaurant’s signature offerings is tossaki temaki sushi. This is hand-rolled sushi with a cut of maguro from the base of the tuna’s head known as tsukizaki. (It is believed that the more frequent movement of the tuna’s head and tail while swimming enhance the flavor of the meat.) The glossy rice made with rich red vinegar and scented nori (seaweed) further adds to the flavor of the tuna. The result is a perfectly balanced taste.
