A Branch of Michelin 2-Star Sushi Kanesaka

Sushiya is a famed Edomae-style sushi restaurant tucked away in a narrow alleyway in Ginza 6-Chome.

Sushiya opened in 2012 as a branch of Sushi Kanesaka, a two-star Michelin restaurant. Shinji Kanesaka, the owner chef of Sushi Kanesaka, nurtures and guides his subordinates under the “Sushi-do” (the way of Sushi) principle. He adopts the character of a sushi master by going beyond technique and knowledge. Chef Kanesaka places importance on three elements of sushi – ingredients, vinegared rice, and wasabi – as well as by paying utmost attention to temperature, humidity, and ripeness.

The only seating at Sushiya is an L-shaped cypress counter that seats 8 people. The seats are strategically placed where you can watch the master's delicate techniques. At the beginning of the course, tsumami (small appetizers for nibbling with a drink) is served, followed by nigiri.

Reservation is a must!
