Creating Edomae Style Sushi

Tomidokoro, a small neighborhood sushi restaurant, is located in a quiet residential area. It is only a 5-minute walk from Onarimon Station. You may need some help finding the restaurant since there is no signboard out front.   

There are many upcoming new stars in the sushi industry that merit attention. Koji Sato, the owner chef of Tomidokoro, is one of them. Chef Sato has solid skills with his own unique thought on menu arrangement. He entered the world of sushi at the age of 18 and was trained at the Sushi Shin, a Michelin-starred restaurant in Nishi-Azabu, prior to going out on his own.  

Chef Sato’s sushi is characterized by its relatively large size. It is heavily seasoned with red vinegar, salt and a little sugar. Hagama, a traditional rice cooking pot, is used to cook specialty rice from Hokkaido. The lunch time omakase (chef’s choice) course serves 12 pieces of nigiri and as such is reasonably priced for a quality sushi restaurant.

There are only six counter seats which contributes to the personalized hospitality for each guest.
