Established in 1947, Tonpachitei is located in a back alley of Ueno’s Ameyoko market. The restaurant is a 2-minute walk from either Ueno-Hirokoji Station on the Tokyo Metro Ginza subway line or from JR Okachimachi Station. It is equally accessible from either station.
Mr. Hidemi Hosokawa, a third-generation owner-chef of Tonpachitei, started his career training at a French restaurant in France. Moving to Germany, he worked at a teppanyaki steak restaurant. This was followed by a tour in Switzerland as head chef. On his father’s retirement, Hosokawa and his wife returned to Japan and took over joint management of the family-owned business.
The popular rosu katsu teishoku (loin cutlet set meal) is cooked to perfection. The loin meat is a generous 180 grams per person. The meat is slowly deep-fried at 130 degrees Celsius for about 10 minutes using 100% lard. The oil is drained thoroughly while the meat continues to cook from the residual heat. The result is a slightly pinkish color of the pork. The tantalizing juices overflow from the cut surface. The fatty meat is delicious; it has a sweetness that spreads throughout your mouth.
Quote from Google Map Review
