Conventionally, tonkatsu is served as a teishoku (set meal) with a side of rice and miso soup. Ginza Katsukami, however, is a new type of tonkatsu restaurant where customers can enjoy tonkatsu in a course format. It is, in fact, the first tonkatsu restaurant in Japan to specialize in course meals. The well thought out courses have a flow that will never bore you. The restaurant is located on the 5th floor of the Miyako Building along Ginza Miyuki-dori Street.
The main ingredient in the tonkatsu set is "Yonezawa Buta Ichiban-Sodachi," a brand-name pork produced in Yamagata Prefecture. Yonezawa pork is fattened for a long time, so the meat has a deep flavor, and the fat is mildly sweet. Two main cuts of pork – fillet and loin – including rare cuts, are served one by one. Each has a different taste, texture, and aroma.
Deep-fried right in front of the counter, the tonkatsu surprisingly does not make the usual loud "sizzling" sound when frying. The batter coats the meat thoroughly so that the flavor of the meat does not escape. After frying, the meat is allowed to rest so that the juices can permeate the entire meat. Hire-katsu (fillet cutlet) is fried at a precise time and temperature to ensure that the center of the cutlet is pink. Rosu-katsu (loin cutlet), rich in flavor, is topped with grated wasabi which enhances the sweetness and flavor of the meat.
