Edomae Sushi Hattori is a 5-minute walking distance from Tokyo Metro Roppongi Station. The restaurant has a hideaway atmosphere with an elegant and cozy ambiance.
Akio Hattori, the owner chef, opened Edomae Sushi Hattori in 2009. He was trained at reputable sushi restaurants: Okei Sushi in Jingumae; Sushi-dokoro Kazama in Nogizaka; and Sushi-dokoro Harada in Ginza.
The menu at Edomae Sushi Hattori uses only the freshest seasonal ingredients and is designed to be enjoyed with sake. The counter for seating is made of 500-year-old hinoki (Japanese cypress) wood. The private room, which can accommodate up to eight people, is made of Japanese cypress and zelkova from Fukushima prefecture. The wall is coated with gold foil on a lacquered surface.
Edomae Sushi Hattori is very particular about the choices of ingredients. The restaurant uses Emi-no-Kizuna, a premium rice suitable for sushi, produced in Nagano prefecture. The rice has high temperature tolerance and the right amount of stickiness. The rice blends well with the rich savory flavor and deep aroma of red vinegar produced by Yokoi. High quality roasted seaweed known as Saga-no-Hashiri produced by Maruyama Nori is used for the sushi. Tilt the sushi fish-down to apply a touch of naturally brewed, top-grade Shimousa soy sauce.
The menu is limited to an omakase (chef’s choice) course starting at 15,000 yen. This pricing is attractive given that popular and famous restaurants in Tokyo typically charge more than 30,000 yen per customer for the omakase course.
