Collagen-rich Pork Bone Broth

Hakata Shokudo serves Hakata Tonkotsu Ramen, a specialty of Fukuoka Prefecture. The restaurant is located in Udagawacho, just past Shibuya Center-Gai. Hakata Tonkotsu Ramen features an ultra-thin noodle in a cloudy broth made from pork bones. The rich and mellow broth is rich in collagen that promotes healthy skin and, along with minerals in the broth, help to strengthen bones.

The toppings are very simple. With Hakata Ramen, you will be asked to choose how soft or firm you want your noodles. As the noodles are characterized by their thinness, they tend to get soggy easily when served in the omori (large) portion. For this reason, authentic Hakata Ramen is standardized with a unique system known as “kaedama” or noodle refill. Kaedama is simply an extra serving of noodles to be added to your leftover broth. Order a kaedama when you have a few mouthfuls of noodles left in your bowl.

Midway through your dish, we recommend you add beni shoga (red pickled ginger), spicy takana (pickled mustard greens) and/or goma (sesame seed) to provide an enhanced flavor.
