Takoyaki Evolution: From Radio-Yaki to National Delight
Takoyaki, created in 1935 by Mr. Ryukichi Endo of Aizuya in Nishinari Ward, Osaka, originated as “radio-yaki,” initially featuring beef. Prompted by a customer mentioning octopus in Akashi, the dish evolved to include octopus and chicken eggs, earning the name “takoyaki.” Its popularity soared in Osaka after being highlighted in weekly magazines. Although the traditional origin is unclear, takoyaki has spread with diverse regional variations, such as the popular mentaiko takoyaki, blending spiciness with a chewy texture. Renowned for its convenience, takoyaki is now a beloved nationwide dish in Japan.
