Tamawarai is a one Michelin-star soba restaurant tucked away in a quiet residential area in Meiji-jingumae. Tamawarai is located diagonally across from Onden Jinja, a Shinto shrine. The restaurant procures Hitachi-Aki soba (buckwheat) from contract farmers in Ibaraki Prefecture. It is billed as the best gen-soba (black buckwheat) in Japan. Gen-soba is super-healthy and is a good source of nutrients such as magnesium and rutin. The owner uses his own hands and a millstone to grind unprocessed gen-soba into buckwheat flour.
The most basic dish is the Arabiki Seiro Soba (coarse-ground chilled soba) which most definitely pleases even the most discerning soba connoisseur. Enjoy the simple taste of soba at first bite without the dipping sauce which can be used afterwards. Once you try it, you will forget all your previous notions of what soba is. Ten Seiro is recommended for those who want to enjoy both tempura and soba at the same time. For the health-conscious, we recommend the Natto Soba made with green soybeans produced in Aomori Prefecture.
