It contributes to the overall richness of the bowl, complementing the intense aroma of miso. Additionally, another key feature of Sapporo miso ramen is the wavy, yellow noodles. While this color varies among ramen shops, it is traditionally achieved by adding egg yolk. The addictive aroma of Sumire’s miso ramen broth is achieved by finishing the soup in a pot with lard and bean sprouts, imparting a slightly charred, almost barbecue-like fragrance.
