Nestled in Tokyo’s Shitamachi district, Fukagawa Sushi Mitsugi stands as a revered Edo-style sushi haven steeped in authenticity. Founded in 1970 by Mr. Shinkichi Mitsugi, this establishment meticulously resurrects traditional Edo-mae nigiri sushi from the pages of Edo-era literature. The toppings, artfully preserved with vinegar and salt, boast a distinctive touch, with the red vinegar-seasoned shari surpassing the contemporary norm threefold.

Mr. Mitsugi’s vision, rooted in unraveling the authentic Edo-era recipe, begets an “orthodox Edo-style sushi” – a rarity in Tokyo’s sushi scene. The well-preserved toppings, marinated in vinegar and salt, paired with an ample portion of red vinegar-seasoned rice, redefine the sushi experience. This culinary marriage of tradition and transformation attracts discerning locals and global enthusiasts alike.

The lunch menu offers four distinctive options. The Bara Chirashi, showcasing chopped and scattered sushi, includes an array of ingredients such as lean fish, white fish, shiny fish, tamago, shiitake mushrooms, and oboro. The Kaisen Don highlights a variety of fresh seafood. The Nama-Maguro Tekka Don (Tuna Sashimi Rice Bowl), in addition to providing wasabi, can also be enjoyed with a special sweet and savory glaze. The renowned Anago Sushi, prepared by simmering the large, tender anago to perfection, completes the selection.

The first floor accommodates three tables and nine counter seats. The second floor offers a private counter for up to four individuals, providing an omakase experience (starting from 22,000 yen per person), as well as private rooms for groups of 4 to 14 people (sushi course starting from 6,600 yen per person). Reservations for the private counter require advance booking up to three days prior.
