Hanedashiya, a soba restaurant situated within the premises of Kabushiki Kaisha Bihou, boasts skilled craftsmen who conjure up magic to produce the renowned Yukimura soba. This type of ni-hachi soba comprises 80% soba flour and 20% binder (wheat flour). The domestically sourced soba flour is meticulously ground using a traditional stone mill, imbuing it with a distinctive and delectable flavor. Being devoid of preservatives or additives, Yukimura soba retains its freshness like no other.

However, what sets Hanedashiya apart is its use of hanedashi noodles. These noodles, too thick or too short for the delivery of Yukimura soba, are nevertheless ideal for a restaurant setting. This is why Hanedashiya offers its signature dish, mori soba, in small, regular, and large sizes, all at the same price.

Upon entering Hanedashiya, one is greeted by a traditional noren curtain and a ticket vending machine. However, the true essence of this dining experience lies in the handcrafted Shinshu soba, which will tantalize your taste buds and leave you with an unforgettable gastronomic encounter.
