[Tokyo] Paiku Tantan Gonoi (排骨担々 五ノ井): The Timeless Delight of ‘Paiku Tan Tan Men’

Gonoi’s Signature Spicy Noodles with Succulent Pork Ribs

Paiku Tan Tan Gonoi strives to preserve the classic essence of the esteemed “Ramen Asuka,” a beloved culinary treasure in Tokyo Shibuya for over fifty years (ceased operations in November 2018). Their signature dish, the “Paiku Tan Tan Men,” is a delectable and spicy noodle creation featuring succulent pork ribs, known as “paiku.”

While this dish has its origins in China, it is not widely available in Japanized Chinese restaurants, nor can it be found at all Tan Tan Men specialty establishments. What distinguishes Paiku Tan Tan Gonoi from others is their distinctive and rejuvenating take on the base soup. Their soup is crafted by simmering chicken carcasses, pork bones, aromatic vegetables, and a whole chicken without the addition of peanut paste.

However, the true star of the dish is undoubtedly the pork ribs. The pork shoulder is marinated in a savory sauce and coated in batter thrice before being fried to perfection and placed atop the Tan Tan Men. The batter is meticulously prepared to adhere firmly to the meat, providing an extra layer of flavor and texture to this already tantalizing dish.

Join us at Paiku Tan Tan Gonoi to savor the taste of tradition. Do not miss the opportunity to sample the one-of-a-kind “Paiku Tan Tan Men” and relish the distinct flavors that have captivated both locals and tourists for more than half a century.
